Hot Chocolate Cookies

Delightful cookies that combine the rich flavor of hot chocolate with a soft, chewy texture, filled with mini marshmallows and chocolate chips.

  • 1 cup hot cocoa mix
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. Stir in the hot cocoa mix until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  6. Fold in the mini marshmallows and chocolate chips.
  7. Drop spoonfuls of dough onto a lined baking sheet.
  8. Bake for 10-12 minutes until the edges are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with milk or hot chocolate. Store in an airtight container for up to a week.
