Italian Chicken Meatloaf

A light and comforting Italian chicken meatloaf that’s easy to prepare and packed with flavor.

Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, parsley, egg, garlic, Italian seasoning, salt, and pepper.
  3. Shape the mixture into a loaf and place in a baking dish.
  4. Spread marinara sauce on top of the meatloaf and sprinkle with extra breadcrumbs.
  5. Bake for 45-55 minutes or until the meatloaf is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Let rest for a few minutes before slicing and serving.

Notes

Let the loaf rest for 5-10 minutes for easier slicing. Adjust wetness with breadcrumbs or marinara as needed.
