Lava chicken is a spicy, crispy, and sticky dish that’s bold in flavor and fast to make. Perfect for weeknight dinners when you need a flavorful kick.

1 lb boneless chicken thighs or breasts 1/2 cup cornstarch 1 tbsp garlic powder Salt to taste 1/3 cup gochujang or sriracha 2 tbsp soy sauce 1 tbsp rice vinegar 2 tbsp honey or brown sugar 2 cloves garlic, minced 1 tsp chili flakes Sesame seeds and green onions for garnish

Instructions

1. Cut chicken into bite-sized chunks and toss in cornstarch, salt, and garlic powder. 2. Heat oil in a skillet. Fry chicken in batches until crispy and golden. 3. In another pan, combine gochujang, soy sauce, vinegar, honey, garlic, and chili flakes. 4. Simmer sauce until it thickens and bubbles. 5. Toss crispy chicken in hot sauce until fully coated. 6. Top with sesame seeds and green onions. Serve hot.

Notes

You can reduce chili for a milder version. Try mozzarella or chili mayo on top for a fun “lava add-on.” Serve with rice, noodles, or in wraps.
