Ingredients

1/4 cup fresh lemon balm leaves (or 1 tbsp dried)

8 oz hot water

1 tsp honey (optional)

1 slice lemon (optional)

Mint or ginger (optional additions)

Instructions

1. Crush the lemon balm leaves gently to release oils.

2. Place in a teapot or cup.

3. Pour hot water over the leaves.

4. Cover and steep for 10 minutes.

5. Strain the tea.

6. Add honey or lemon if desired.

7. Serve hot or iced.

Notes

Use dried lemon balm if fresh isn’t available.

Double the recipe for a chilled pitcher.
