  • 1/2 cup blueberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

  • 1/4 teaspoon salt

Instructions

  1. Combine cottage cheese, honey (or maple syrup), lemon juice, and lemon zest in a mixing bowl. Stir until well mixed.
  2. Fold in blueberries and oats gently.
  3. Add chopped nuts and salt to the mixture if using.
  4. Use your hands to form small bite-sized balls from the mixture.
  5. Place the bites on a parchment-lined tray.
  6. Chill in the refrigerator for at least 30 minutes before serving.
