Lemon Garlic Shrimp and Asparagus

A quick and flavorful one-pan dish featuring succulent shrimp and tender asparagus, brightened with lemon and garlic.

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the asparagus to the skillet and cook for about 3-4 minutes until tender-crisp.
  4. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes if using.
  5. Cook for 3-4 minutes until the shrimp are pink and cooked through.
  6. Pour lemon juice over the shrimp and asparagus, stirring to combine.
  7. Serve hot, garnished with fresh parsley.

Notes

To serve, enjoy over rice, quinoa, or pasta for a heartier meal. Store leftovers in an airtight container in the fridge for up to 2 days.
