Lemon Rice Krispy Treats

A delightful twist on the classic Rice Krispy Treats with a refreshing lemon flavor.

Ingredients

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 3 cups mini marshmallows (half yellow lemon-flavored, half classic white)
  • Zest of 1 lemon (plus more for garnish)
  • 1/2 teaspoon lemon extract (optional)
  • 1/2 cup white chocolate chips or melting wafers
  • Lemon peel or zest, for garnish

Instructions

  1. Grease a 9×9-inch baking pan or line with parchment paper.
  2. In a saucepan, melt the butter over low heat.
  3. Add the mini marshmallows and stir until melted and smooth.
  4. Stir in the lemon zest and lemon extract (if using).
  5. Remove from heat and stir in the Rice Krispies until well coated.
  6. Press the mixture into the prepared pan without compressing too hard.
  7. Melt the white chocolate chips in the microwave and drizzle over the bars.
  8. Sprinkle with lemon zest or curls of lemon peel.
  9. Allow to cool for at least 30 minutes, then cut into squares.

Notes

For stronger lemon flavor, use more lemon zest. These treats can be stored in an airtight container for up to 3 days.
