Loaded Potato Taco Bowls

Hearty and comforting Loaded Potato Taco Bowls filled with crispy roasted potatoes, ground meat, veggies, and topped with avocado and cheese.

  • 2 large potatoes
  • 1 pound ground beef or turkey
  • 1 cup diced bell peppers
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro (optional) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice the potatoes into small cubes and toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until crispy and golden.
  3. In a skillet, heat some olive oil over medium heat. Add the ground meat and cook until browned, breaking it apart with a spatula.
  4. Add the diced bell peppers and corn to the skillet, followed by the taco seasoning. Stir everything together and cook for another 5 minutes.
  5. In a bowl, layer the crispy roasted potatoes, meat mixture, black beans, shredded cheese, and avocado.
  6. Garnish with fresh cilantro if desired, serve warm, and enjoy!

Notes

For a healthier twist, switch to sweet potatoes instead of regular ones. Make sure to roast the potatoes for that perfect crunch.
