Loaded Potato Taco Bowl

A comforting and fun meal featuring creamy mashed potatoes topped with spiced ground meat and fresh garnishes.

  • 4 large potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1 cup lettuce, chopped
  • Optional: jalapeños, avocado, or salsa

Instructions

  1. Boil the potatoes in a large pot until tender, about 20 minutes.
  2. While the potatoes cook, brown the ground meat in a skillet over medium heat.
  3. Add the taco seasoning to the meat, mixing it in well.
  4. Once the potatoes are soft, drain and mash them in a bowl.
  5. In a baking dish, layer the mashed potatoes first, followed by the seasoned meat.
  6. Sprinkle shredded cheese on top and place it under the broiler for a few minutes to melt.
  7. Remove from the oven and add the fresh toppings like sour cream, lettuce, and tomatoes.

Notes

Serve warm, allowing everyone to customize their bowls. Store leftovers in an airtight container in the fridge for up to 3 days.
