Loaded Potato Taco Bowls

A hearty and comforting dish that combines crispy roasted potatoes with savory ground meat, beans, and fresh toppings.

  • 2 large potatoes, diced
  • 1 lb ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread them on a baking sheet and roast for about 30-35 minutes, or until crispy and golden.
  3. Cook the ground meat in a skillet over medium heat until browned. Add black beans and corn, cooking until heated through. Season with additional salt and pepper if desired.
  4. Assemble the bowls: start with a base of crispy potatoes, then add the meat mixture, diced bell peppers, cheese, and top with fresh avocado and cilantro.
