Low Carb Burrito Bowl

A delicious and healthy Low Carb Burrito Bowl featuring ground chicken, cauliflower rice, and fresh toppings.

Ingredients

  • 1 lb ground chicken
  • 2 cups cauliflower rice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup diced tomatoes
  • 1/2 cup corn
  • 1/2 cup black beans, drained and rinsed
  • 1 avocado, diced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a skillet over medium heat, cook the ground chicken until browned.
  2. Add chili powder, cumin, salt, and pepper to the chicken, stirring until well combined.
  3. In another pan, cook the cauliflower rice until tender.
  4. In a bowl, layer the cauliflower rice, seasoned chicken, diced tomatoes, corn, and black beans.
  5. Top with diced avocado and fresh cilantro.
  6. Serve with lime wedges on the side.

Notes

Serve warm and squeeze fresh lime juice over the top for extra flavor.
