Classic Spaghetti Aglio e Olio

A simple yet flavorful Italian pasta dish made with garlic, olive oil, and red pepper flakes.

Ingredients

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • 100ml extra-virgin olive oil
  • 1 tsp red pepper flakes
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, grated (optional)

Instructions

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic and red pepper flakes to the skillet and sauté until the garlic is golden, being careful not to burn it.
  4. Once the spaghetti is cooked, reserve a cup of pasta water and drain the rest.
  5. Add the drained spaghetti to the skillet with the garlic oil, tossing to combine. If needed, add reserved pasta water to loosen the sauce.
  6. Season with salt and garnish with fresh parsley and grated Parmesan cheese, if desired. Serve immediately.

Notes

This dish is naturally vegan if Parmesan cheese is omitted. Perfect for a quick weeknight dinner.
