Maple Dijon Chicken Sweet Potato Bowls

A warm and comforting bowl featuring tender chicken marinated in a sweet and tangy maple-dijon glaze, paired with roasted sweet potatoes and fresh greens.

  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1/4 cup Dijon mustard
  • 1/4 cup maple syrup
  • Salt and pepper to taste
  • Olive oil
  • Optional: fresh spinach or mixed greens

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes.
  3. Whisk together Dijon mustard, maple syrup, salt, pepper, and a splash of olive oil in a mixing bowl.
  4. Place the diced sweet potatoes on a baking sheet. Drizzle with olive oil, salt, and pepper, and toss to coat.
  5. Bake sweet potatoes for 25 minutes, until tender.
  6. Marinate the chicken in the Dijon-maple mixture for about 15 minutes while sweet potatoes are roasting.
  7. Cook the chicken in a skillet over medium-high heat for about 5-7 minutes on each side until cooked through.
  8. Assemble your bowls by adding sweet potatoes and sliced chicken over a base of greens, if using.

Notes

Serve warm and drizzle with extra maple syrup or Dijon for added flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
