Matilda’s Chocolate Cake

A rich and moist chocolate cake that is perfect for any celebration or cozy night in.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients; mix on medium speed for 2 minutes. Stir in the boiling water (the batter will be thin).
  4. Pour the batter evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick comes out clean. Allow the cakes to cool for 10 minutes before removing them from the pans to cool completely.
  6. For the frosting, melt the butter in a saucepan over medium heat. Stir in the cocoa powder until well combined.
  7. Remove from heat and add powdered sugar, heavy cream, and vanilla. Beat until smooth and glossy.
  8. Spread the frosting between the layers of cake and over the top and sides of the cooled cake.

Notes

For added flavor, substitute brewed coffee for the boiling water. Ensure all ingredients are at room temperature for best results.
