Matilda’s Chocolate Cake

A delightful chocolate dessert that strikes the perfect balance between rich flavor and moist texture.

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 tsp baking powder
  • 1 and 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup unsweetened cocoa powder (for frosting)
  • 1/2 cup butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1/3 cup milk (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Carefully stir in the boiling water (the batter will be thin).
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool in pans for 10 minutes, then remove to wire racks to cool completely.
  8. For the frosting: In a bowl, mix cocoa powder and butter until smooth. Gradually beat in powdered sugar and milk. Stir in vanilla.
  9. Once the cakes are cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
  10. Serve and enjoy!

Ensure all ingredients are at room temperature for a smoother batter. Use high-quality cocoa powder for the best flavor.
