Mediterranean Baked Fish

A quick and easy Mediterranean Baked Fish dish that combines fresh vegetables and herbs for a healthy, flavorful meal.

  • 4 fillets of white fish (e.g., cod, tilapia, or sea bass)
  • 2 medium tomatoes, sliced
  • 1 medium onion, sliced
  • 1 bell pepper (red or yellow), sliced
  • 3 cloves garlic, minced
  • 1 lemon, sliced
  • ¼ cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease a 9×13-inch baking dish with olive oil.
  3. Spread the sliced tomatoes, onion, and bell pepper evenly on the bottom of the baking dish.
  4. Pat the fish fillets dry with a paper towel and season both sides with salt, pepper, oregano, and thyme.
  5. Lay the seasoned fish fillets on top of the vegetables in the baking dish.
  6. Sprinkle the minced garlic over the fish.
  7. Pour the olive oil evenly over the fish and vegetables.
  8. Arrange the lemon slices on top of the fish.
  9. Cover with aluminum foil and bake for 20 minutes.
  10. Remove the foil and bake for an additional 5–10 minutes, or until the fish flakes easily with a fork.
  11. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired.

Notes

Serve with cooked rice, couscous, or quinoa, and pair with a green salad. For extra flavor, use fresh herbs and adjust vegetable options.
