Mediterranean Chickpea Feta Wrap

A quick and easy Mediterranean wrap featuring chickpeas, feta, fresh vegetables, and a light lemon-olive dressing.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 large whole wheat wraps
  • Fresh spinach or mixed greens

Instructions

  1. In a mixing bowl, combine chickpeas, feta cheese, cherry tomatoes, cucumber, and red onion.
  2. In a separate small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss gently to coat.
  4. Lay out the wraps and place a handful of spinach or mixed greens on each.
  5. Spoon the chickpea mixture onto the wraps, then roll them up tightly.
  6. Cut in half and serve immediately.

Notes

Store the chickpea mix in an airtight container in the fridge for up to 3 days. Assemble wraps shortly before eating to avoid sogginess.
