Mongolian Beef

A delightful stir-fry featuring tender beef in a sweet and savory sauce with crunchy veggies, perfect for quick weeknight dinners.

  • 1 lb beef steak (flank or sirloin), sliced thinly
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 4 green scallions, chopped
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Steamed rice, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced beef and cook until browned, about 3-4 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the bell pepper and onion, cooking until softened, about 3-5 minutes.
  4. Return the beef to the skillet.
  5. Mix together soy sauce, brown sugar, garlic, and ginger in a small bowl. Pour the sauce over the beef and vegetables.
  6. Cook for another 2-3 minutes until the sauce thickens slightly.
  7. Stir in green scallions before serving.
  8. Serve over steamed rice.

Notes

For easier slicing, freeze the beef for about 30 minutes before cutting. You can adjust the sweetness by adding more or less brown sugar.
