2 medium fresh lemons, juiced

1-inch fresh ginger, grated

2 Tbsp apple cider vinegar (raw, unfiltered)

12 tsp honey (optional)

2 cups filtered water

1 pinch cayenne (optional)

Instructions

1. Roll lemons and juice until you have 1/4 cup of juice.

2. Peel and grate ginger. Optionally press through cheesecloth for smoothness.

3. Add lemon juice, ginger, vinegar, honey, cayenne (if using), and water to a jar.

4. Seal tightly and shake for 20 seconds until lightly frothy.

5. Taste and adjust with honey or extra water.

6. Chill 10 minutes or serve lukewarm.

Notes

Use glass containers to preserve taste.

Sweeten sparingly; each teaspoon of honey adds about 21 calories.
