No-Bake Blueberry Chia Seed Pie

A simple and light no-bake pie made with chia seeds and fresh blueberries, perfect for a quick dessert.

Ingredients

  • 1 cup blueberries
  • 1/4 cup chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • Pinch of salt

Instructions

  1. In a medium bowl, combine blueberries, chia seeds, almond milk, honey, and vanilla extract. Stir well and let it sit for about 15 minutes to thicken.
  2. In another bowl, mix graham cracker crumbs, melted butter, and salt until combined. Press this mixture into the bottom of a pie dish to form the crust.
  3. Pour the blueberry chia seed mixture into the crust and spread it evenly.
  4. Refrigerate for at least 2 hours to set.
  5. Serve chilled and enjoy your guilt-free treat!

Notes

Cover the pie to store in the fridge for up to 4 days. For variations, use gluten-free graham crumbs or swap almond milk with coconut milk.
