No Bake Cookie Dough Bars

Quick and easy no-bake cookie dough bars made with almond flour, oats, and chocolate chips.

Ingredients

  • 1 cup almond flour
  • 1/2 cup oats
  • 1/4 cup maple syrup
  • 1/4 cup nut butter (e.g., almond or peanut butter)
  • 1/4 cup dairy-free chocolate chips
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine almond flour, oats, and salt.
  2. Add in maple syrup, nut butter, and vanilla extract, stirring until combined.
  3. Fold in the chocolate chips.
  4. Press the mixture into a lined baking dish.
  5. Refrigerate for at least an hour until firm.
  6. Cut into bars and enjoy!

Notes

For a nut-free version, use sunflower seed butter. Bars can be stored in an airtight container in the fridge for up to one week.
