No-Bake Mini Triple Chocolate Cheesecakes

Rich and creamy mini cheesecakes layered with three kinds of chocolate and a no-bake cookie crumb crust.

  • 1 cup chocolate cookie crumbs
  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz whipped topping
  • 1/2 cup melted chocolate (dark, milk, or a mix)
  • 1/2 cup chocolate ganache (for topping)
  • Chocolate shavings or chips (for garnish)

Instructions

  1. In a bowl, combine chocolate cookie crumbs and melted butter; mix well. Press the mixture into the bottom of individual mini cheesecake cups.
  2. In a separate bowl, beat together cream cheese and powdered sugar until smooth.
  3. Fold in the whipped topping and melted chocolate until fully combined.
  4. Spoon the cheesecake mixture over the crusts in the mini cups.
  5. Chill in the refrigerator for at least 120-240 minutes, until set.
  6. Before serving, drizzle with chocolate ganache and add chocolate shavings or chips on top for garnish.

Notes

Press the crust firmly for it to hold together. Chill at least 2 hours for best texture.
