One-Dish Chicken and Zucchini Meal

A quick and healthy one-dish meal featuring chicken and zucchini, seasoned to perfection and baked for easy cleanup.

Ingredients

  • 2 chicken breasts
  • 2 medium zucchinis
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt to taste
  • Pepper to taste
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the chicken breasts in a baking dish and season with garlic powder, onion powder, salt, pepper, and Italian seasoning.
  3. Slice the zucchinis and add them to the dish, tossing everything together with olive oil.
  4. Bake in the preheated oven for 25-30 minutes, until the chicken is cooked through and the zucchinis are tender.
  5. Serve hot for a quick and healthy dinner.

Notes

For a bit of crunch, consider adding breadcrumbs on top before baking. This dish is also great for meal prep!
