One-Pan Honey Garlic Kielbasa & Veggies

A quick and delicious one-pan meal featuring kielbasa, veggies, and a sweet honey garlic sauce.

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the Kielbasa into bite-sized pieces and place them into the skillet.
  3. Chop the bell peppers, baby carrots, and baby potatoes, and add them to the skillet.
  4. Whisk together honey, minced garlic, soy sauce, and olive oil in a mixing bowl.
  5. Pour this mixture over the Kielbasa and veggies. Toss everything to coat evenly.
  6. Bake in the oven for 25-30 minutes, stirring halfway through, until the veggies are tender and the Kielbasa is caramelized.
  7. Remove from oven and sprinkle with fresh parsley or green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Consider freezing for longer storage. Adjust honey and garlic to taste.
