One Pot Beef Taco Pasta

A comforting and flavorful one-pot meal that combines the taste of tacos with pasta, perfect for busy families.

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 2 cups pasta (e.g., penne or rotini)
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Brown the ground beef in a large pot over medium heat and drain excess fat.
  2. Add the onion, garlic, and bell pepper; cook until softened.
  3. Stir in the taco seasoning until well coated.
  4. Add the diced tomatoes and beef broth; bring to a simmer.
  5. Stir in the pasta and cover the pot; cook until pasta is al dente, about 10-12 minutes.
  6. If using, stir in cheese until melted.
  7. Season with salt and pepper, and garnish with cilantro before serving.

Notes

Avoid overcooking the pasta; use beef broth or water to adjust consistency if too thick. You can substitute ground beef with ground turkey or chicken, if preferred.
