One-Pot Broccoli Mac and Cheese

Quick and comforting One-Pot Broccoli Mac and Cheese perfect for busy nights.

Ingredients

  • 8 oz elbow macaroni
  • 2 cups broccoli florets
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Bring water to a boil in a large pot and cook the elbow macaroni according to package instructions.
  2. Add the broccoli florets during the last 2 minutes of cooking.
  3. Drain the macaroni and broccoli, then return to the pot.
  4. Melt the butter over medium heat in the same pot.
  5. Stir in the flour and cook for 1 minute.
  6. Whisk in the milk gradually and bring to a simmer, stirring constantly until thickened.
  7. Remove from heat and stir in the cheddar cheese until melted and smooth.
  8. Combine the cheese sauce with the macaroni and broccoli.
  9. Season with salt and pepper to taste, and serve warm.

Notes

For creamier texture, use whole milk. Serve with extra cheese on top if desired.
