Parmesan Spinach Mushroom Pasta Skillet

A quick and cozy skillet pasta dish featuring fresh spinach, mushrooms, and grated Parmesan, perfect for weeknight dinners.

  • 8 oz pasta (your choice)
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta according to package instructions and drain.
  2. Heat the olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
  3. Add sliced mushrooms and cook until they are soft.
  4. Stir in the fresh spinach and cook until wilted.
  5. Add the cooked pasta to the skillet and mix well.
  6. Stir in the Parmesan cheese, and season with salt, pepper, and red pepper flakes if using.
  7. Serve warm and enjoy!

Notes

For added brightness, squeeze some lemon juice on top before serving. Store leftovers in an airtight container for up to two days.
