Peanut Butter Brownie Swirl Cookies

Decadent cookies that combine the rich flavors of peanut butter and brownie batter for a delightful treat.

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the peanut butter mixture and mix until combined.
  5. Fold in chocolate chips if using.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are firm.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a nut-free version, use sun butter. Store cookies in an airtight container at room temperature for up to a week.
