Peanut Butter Chocolate Caramel Cookies

A delightful treat that combines creamy peanut butter, sweet caramel, and indulgent melted chocolate.

  • 2 cups old-fashioned oats
  • 1 cup creamy or chunky peanut butter
  • 4 tablespoons unsalted butter
  • ½ cup brown sugar
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce
  • 1 cup chocolate chips, melted
  • Sea salt (optional, for garnish)

Instructions

  1. In a medium saucepan over medium heat, combine butter, brown sugar, and milk. Stir gently until the butter melts and the mixture starts to bubble slightly. Remove from heat and mix in peanut butter and vanilla extract until smooth.
  2. Gradually add oats, stirring until they are evenly coated. The mixture should be sticky and hold together when pressed.
  3. Using a tablespoon or small cookie scoop, portion the oat mixture onto a parchment-lined tray. Flatten each portion slightly into a circular shape and create a small indentation in the center.
  4. Spoon about a teaspoon of caramel sauce into the indentation of each cookie.
  5. Melt chocolate chips in the microwave in 20-second bursts, stirring after each until smooth. Drizzle the melted chocolate over the cookies.
  6. Refrigerate the cookies for at least 30 minutes to allow them to firm up.

Notes

Store in an airtight container in the fridge for about a week or freeze for longer storage. Consider adding nuts or dried fruit for variation.
