Stack of chewy peanut butter cookies with soft center

Classic soft and chewy peanut butter cookies with the perfect criss-cross fork marks and nutty flavor that melts in your mouth.

Ingredients

Scale

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1/2 cup packed brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

3/4 teaspoon baking soda

1/4 teaspoon salt

Instructions

1. Cream together peanut butter, butter, brown sugar, and white sugar until light and fluffy.

2. Add egg and vanilla extract, mixing until smooth.

3. Whisk flour, baking soda, and salt in a separate bowl, then slowly combine with wet ingredients.

4. Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet.

5. Press a fork twice into each ball to form a criss-cross pattern.

6. Bake at 350°F (175°C) for 9 to 11 minutes until edges are set but centers remain soft.

7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For softer cookies, remove from oven while the centers look slightly underbaked.

Dip fork in sugar before pressing to prevent sticking.

Natural peanut butter may alter texture unless stirred thoroughly.

Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
