Peanut Butter Oat Cups

A quick, no-bake snack made with oats and peanut butter, perfect for busy days or a lunchbox treat.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1/4 cup chopped nuts or seeds (optional)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until well combined.
  2. If desired, fold in chocolate chips and/or chopped nuts or seeds.
  3. Line a muffin tin with paper liners or grease it lightly.
  4. Spoon the mixture into the muffin cups, pressing down firmly.
  5. Refrigerate for at least 30 minutes until set.
  6. Remove from the tin and enjoy as a no-bake snack!

Notes

Press the mixture firmly into the cups so they hold shape. Use natural peanut butter for a cleaner taste. If the mix is too dry, add a little more peanut butter or a splash of milk. If it is too wet, add a bit more oats.
