Pear & Apple Grilled Cheese With Caramelized Onions

A delicious mix of sweet pears and apples with sharp cheddar cheese and savory caramelized onions, all grilled to perfection.

  • 4 slices sourdough bread
  • 2 tablespoons unsalted butter
  • 1 medium pear, thinly sliced
  • 1 medium apple, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon balsamic vinegar
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of unsalted butter. Add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, for about 10 minutes until golden brown and softened. Add the balsamic vinegar and cook for an additional 2-3 minutes. Remove from the skillet and set aside.
  2. In the same skillet, melt the remaining tablespoon of butter over medium heat.
  3. On two slices of sourdough bread, layer half of the cheddar cheese, followed by the caramelized onions, then the apple slices, the pear slices, and top with the remaining cheddar cheese. Cover with the other two slices of bread.
  4. Place one sandwich in the skillet and grill on one side for about 4-5 minutes, or until golden brown. Carefully flip the sandwich and grill the other side for another 4-5 minutes until the cheese melts thoroughly.
  5. Repeat the grilling process for the second sandwich.
  6. Remove both sandwiches from the skillet, let cool for a minute, then slice in half and serve warm.

Notes

Slice the fruit thin to ensure it warms through and mixes well with the cheese. Press gently with the spatula when grilling for even contact.
