Pecan Pie Cookies

A delightful twist on the classic dessert, these cookies capture the rich, nutty flavor of pecan pie in a bite-sized treat.

  • 1 cup unsalted butter (or vegan butter)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup maple syrup
  • 2 cups all-purpose flour
  • 1 cup pecans, chopped
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Stir in the maple syrup and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until combined.
  5. Fold in the chopped pecans.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be enjoyed plain or dusted with powdered sugar. To enhance flavor, try toasting the pecans beforehand.
