Pepperoni Pizza Quesadillas

Delicious quesadillas filled with melted cheese and zesty pepperoni, perfect for a quick snack or dinner.

  • 4 medium flour tortillas
  • 1 ½ cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup sliced pepperoni
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil or butter (for grilling)
  • 1/2 cup pizza or marinara sauce (for dipping)

Instructions

  1. Heat your pan: Place a large skillet over medium heat and add a little olive oil or butter.
  2. Assemble the quesadilla: Lay a tortilla flat and sprinkle half of it with mozzarella and cheddar cheeses. Add a layer of pepperoni slices, then sprinkle on oregano and garlic powder. Fold the tortilla in half.
  3. Cook until crispy: Place the folded tortilla in the skillet and cook for about 2–3 minutes per side, or until golden and crispy and the cheese is fully melted. Press gently with a spatula for even browning.
  4. Repeat & slice: Repeat with remaining tortillas and ingredients. Let cool slightly, then slice each quesadilla into wedges.
  5. Serve with sauce: Serve warm with a side of marinara or pizza sauce for dipping!

Notes

For extra crunch, brush the tortillas with olive oil before grilling. Experiment with different cheeses or add veggies for a personal touch.
