Mediterranean Spinach and Feta Quesadillas

A quick and delicious quesadilla filled with fresh spinach, feta cheese, and melting mozzarella, perfect for a cozy meal or snack.

  • 4 large flour tortillas
  • 2 cups fresh spinach, washed and dried
  • 1 cup shredded mozzarella or mild melting cheese
  • 1/2 cup crumbled feta cheese
  • 1 small red onion, thinly sliced (optional)
  • 1 small tomato, sliced (optional)
  • 1 to 2 tablespoons olive oil or butter
  • Salt and black pepper to taste
  • Lemon wedge for serving (optional)

Instructions

  1. Wash and dry the spinach well.
  2. Heat the skillet over medium heat and add a little oil.
  3. Sauté spinach for 1 to 2 minutes until wilted. Remove and set aside.
  4. Warm a tortilla in the pan for about 20 to 30 seconds on one side.
  5. Flip the tortilla, add shredded cheese, then sprinkle feta and spinach. Add onion or tomato if using.
  6. Fold the tortilla or place a second one on top.
  7. Cook 2 to 3 minutes per side until golden and cheese melts. Press gently with a spatula.
  8. Remove, rest for 1 minute, cut into wedges, and serve.

Notes

Serve hot with a lemon wedge. Pair with a green salad or pickled onions for extra contrast.
