Classic Spaghetti Aglio e Olio

A quick and easy Italian pasta dish made with garlic, olive oil, and chili flakes.

Ingredients

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • 100ml extra virgin olive oil
  • 1 teaspoon red chili flakes
  • Salt, to taste
  • Fresh parsley, chopped, for garnish
  • Parmesan cheese, grated, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-low heat.
  3. Add the sliced garlic and sauté for 1-2 minutes until lightly golden, being careful not to burn.
  4. Stir in the red chili flakes and remove from heat.
  5. Once the pasta is cooked, reserve some pasta water and drain the rest.
  6. Add the drained spaghetti to the skillet with the garlic oil.
  7. Toss everything together, adding reserved pasta water as needed to create a silky sauce.
  8. Season with salt and garnish with fresh parsley and grated Parmesan cheese, if using.
  9. Serve immediately.

Notes

Best enjoyed fresh. Can be customized with additional ingredients like shrimp or vegetables.
