Delicious Vegetarian Lasagna

A rich and flavorful vegetarian lasagna packed with fresh vegetables and a creamy cheese blend.

Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 zucchini, thinly sliced
  • 1 bell pepper, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, combine ricotta cheese, spinach, garlic powder, onion powder, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Layer 3 lasagna noodles on top of the sauce.
  6. Spread half of the ricotta mixture over the noodles, followed by half of the sliced zucchini and diced bell pepper.
  7. Add a layer of mozzarella cheese and a layer of marinara sauce.
  8. Repeat layers, finishing with noodles, marinara sauce, mozzarella, and Parmesan cheese on top.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
  11. Allow to cool for 10 minutes before slicing and serving.

Notes

Feel free to add any additional vegetables of your choice to enhance flavor and nutrition.
