Pineapple Cucumber Salad

A bright and crunchy salad combining pineapple, cucumber, bell pepper, and red onion, tossed with lime juice and cilantro for a refreshing side dish.

  • 1 ripe pineapple, diced
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Instructions

  1. In a large bowl, combine the diced pineapple, cucumber, red bell pepper, and red onion.
  2. Add the chopped cilantro and lime juice, and toss gently to combine.
  3. Season with salt and pepper to taste.
  4. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.

Notes

Store the salad in an airtight container in the refrigerator for up to two days. For best texture, keep pineapple and cucumber separate until ready to serve.
