Ingredients

1 English cucumber, thinly sliced

1 cup fresh or canned pineapple chunks (in juice)

1/4 red onion, thinly sliced

Juice of 1 lime

1/4 tsp chili flakes (optional)

Salt to taste

Fresh mint (optional)

Instructions

1. Lightly salt cucumber slices and let sit for 10 minutes in a colander. Pat dry.

2. In a large bowl, combine cucumber, pineapple chunks, and red onion.

3. Add lime juice and chili flakes. Toss to combine.

4. Taste and adjust salt. Add mint if desired.

5. Serve chilled.

Notes

Salting cucumbers ahead keeps them crisp.

You can use canned pineapple packed in juice (not syrup).

Add avocado or grilled chicken for a heartier version.
