Pistachio Cookies

Delicious pistachio cookies with a nutty flavor from browned butter, complemented by dark chocolate chips and a sprinkle of sea salt.

Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios
  • 1 cup dark chocolate chips
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, brown the butter, stirring often until it turns golden brown.
  3. Remove from heat and let it cool slightly.
  4. In a large bowl, mix together the brown butter, brown sugar, and granulated sugar until combined.
  5. Add the egg and vanilla extract, mixing well.
  6. In another bowl, whisk together flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Fold in the pistachios and dark chocolate chips.
  9. Scoop tablespoons of dough onto the prepared baking sheet and flatten slightly.
  10. Sprinkle with flaky sea salt.
  11. Bake for 10-12 minutes or until the edges are lightly golden.
  12. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the dough to keep cookies tender.
