Quick Mediterranean Chicken Tacos

A vibrant and satisfying meal that combines juicy chicken with fresh Mediterranean ingredients in a fun taco format.

  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Taco shells or tortillas

Instructions

  1. In a bowl, combine the shredded chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  3. Toss everything together until well mixed.
  4. Fill taco shells or tortillas with the Mediterranean chicken mixture.
  5. Serve immediately, garnished with extra parsley if desired.

Notes

For added flavor, serve warm with extra parsley or lemon juice. Leftover filling can be stored in the fridge for up to three days.
