Red Velvet Cheesecake Cake

A delightful combination of red velvet cake and rich cheesecake, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 cup cream cheese
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, mix the oil, buttermilk, eggs, food coloring, and vanilla. Combine this mixture with the dry ingredients until smooth.
  4. Divide the batter evenly between the prepared pans and bake for 25-30 minutes. Let cool in the pans for 10 minutes, then remove to cool completely on a wire rack.
  5. For the cheesecake layer, beat the cream cheese until smooth. Gradually add the heavy cream and powdered sugar until fluffy. Stir in the vanilla.
  6. Assemble the cake by layering one red velvet cake round, spreading a layer of cheesecake, and then topping with the second red velvet layer. Frost with the remaining cheesecake mixture.
  7. Refrigerate for a few hours before serving. Enjoy!
