Red Velvet Strawberry Cheesecake

A delightful dessert combining classic red velvet cake and creamy cheesecake, topped with fresh strawberries.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • Red food coloring
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • Fresh strawberries for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the oil, buttermilk, eggs, vanilla, and food coloring.
  4. Combine the wet and dry ingredients until just mixed. Pour the batter into the prepared pan and bake for 25-30 minutes.
  5. Let the cake cool completely.
  6. For the cheesecake layer, beat the cream cheese and powdered sugar until smooth.
  7. In another bowl, whip the heavy cream to stiff peaks, then fold it into the cream cheese mixture.
  8. Spread the cheesecake layer over the cooled cake.
  9. Top with fresh strawberries and refrigerate for at least 4 hours before serving.

Notes

Ensure your cream cheese is at room temperature for a smooth cheesecake layer. You can use a different type of fruit if preferred.
