Delicious Red Velvet Thumbprint Cookies

Soft and buttery red velvet cookies with a creamy, tangy filling that are perfect for any occasion.

  • 1 cup room temperature butter
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup cocoa powder
  • 1 tsp red food coloring
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 oz cream cheese (for filling)
  • 1 cup powdered sugar (for filling)
  • 1/2 tsp vanilla (for filling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream the butter, granulated sugar, and brown sugar together.
  3. Add the cocoa powder, red food coloring, vanilla extract, and egg yolk; mix well.
  4. Gradually add the flour, baking soda, and salt until combined.
  5. Chill the dough for 10-15 minutes.
  6. Use a small cookie scoop to form balls and place them on a baking sheet.
  7. Press your thumb into the center of each ball to make a well.
  8. Bake for about 10-12 minutes until the edges are set.
  9. Let them cool for 5 minutes before transferring to a wire rack.
  10. For the filling, whip cream cheese, powdered sugar, and vanilla until smooth, then pipe into the wells of the cookies.

Notes

Chill the dough to keep the shape neat and help the cookies bake up soft and thick. You can also freeze unbaked balls and bake from frozen.
