Roasted Cauliflower Beef Bowl

A hearty and comforting bowl featuring roasted cauliflower and seasoned ground beef, perfect for chilly evenings.

  • 1 head cauliflower, cut into florets
  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread the cauliflower on a baking sheet and roast for about 25-30 minutes until golden and tender.
  3. In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Season with salt and pepper.
  4. Serve the roasted cauliflower topped with the cooked ground beef and garnish with chopped fresh parsley.

Notes

Great for meal prep and storing leftovers. Can be served hot with a favorite sauce.
