Roasted Sweet Potato Rounds with Feta and Honey

A quick and tasty side dish featuring roasted sweet potatoes topped with creamy feta and a drizzle of honey.

  • 2 large sweet potatoes
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into 1/4-inch rounds and place them on a baking sheet.
  3. Drizzle with olive oil, and season with salt and pepper. Toss to coat.
  4. Roast in the oven for 25-30 minutes, flipping halfway, until crispy and tender.
  5. Remove from the oven and top with crumbled feta cheese and drizzle with honey.
  6. Garnish with fresh herbs if desired. Serve warm.

Notes

Use a hot oven for extra crispiness. Store in an airtight container in the fridge for up to 3 days.
