Roasted Sweet Potato Rounds with Honey & Feta Bliss

Quick and delicious roasted sweet potato rounds topped with feta cheese and drizzled with honey, perfect as a snack, side, or appetizer.

  • 2 large Sweet Potatoes
  • 2 tablespoons Olive Oil (Extra virgin recommended)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika (Omit if preferred)
  • 1 cup Feta Cheese (Goat cheese can be substituted)
  • 2 tablespoons Honey (Maple syrup can be used)
  • 2 tablespoons Parsley (Freshly chopped)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment or lightly oil it.
  2. Wash and dry sweet potatoes. Slice into 1/4-inch thick rounds.
  3. Put rounds in a bowl. Add olive oil, salt, pepper, and smoked paprika. Toss to coat each slice.
  4. Lay rounds in a single layer on the baking sheet. Do not overlap.
  5. Roast for 20–25 minutes, flipping halfway through.
  6. Remove from oven and let cool for 2 minutes. Top each round with crumbled feta and drizzle honey over the rounds.
  7. Add chopped parsley before serving.

Notes

For crispier rounds, roast on a wire rack over the sheet pan. Reheat in a 350°F oven for best texture.
