Rotisserie Chicken Broccoli Pasta

A quick and easy creamy pasta dish combining rotisserie chicken, broccoli, and a rich Parmesan sauce.

  • 2 cups rotisserie chicken, shredded
  • 2 cups broccoli florets
  • 8 oz pasta (penne or rotini)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Optional: red pepper flakes, for heat

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add broccoli florets to the skillet and cook for 3-4 minutes until slightly tender.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  5. Add shredded rotisserie chicken and cooked pasta to the skillet, mixing everything together.
  6. Stir in grated Parmesan cheese until melted and creamy. Season with salt, pepper, and red pepper flakes if desired.
  7. Serve warm.

Notes

For extra flavor, garnish with additional Parmesan and a sprinkle of red pepper flakes. Store leftovers in an airtight container for up to 3 days.
