Rotisserie Chicken Broccoli Pasta

A quick and comforting pasta dish featuring rotisserie chicken, fresh broccoli, and a creamy sauce, perfect for busy weeknights.

  • 2 cups rotisserie chicken, shredded
  • 8 oz pasta (such as penne or fusilli)
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions. Add the broccoli florets to boiling water during the last 3 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the shredded rotisserie chicken and cook until heated through.
  4. Pour in the heavy cream and bring to a simmer. Add the cooked pasta and broccoli to the skillet, stirring to combine.
  5. Add shredded mozzarella cheese and stir until melted and creamy. Season with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese if desired.

Notes

This dish pairs well with a fresh salad or garlic bread. Leftovers can be stored in the fridge for about 3 days.
