Rotisserie Chicken Broccoli Pasta

A quick and comforting pasta dish featuring rotisserie chicken, broccoli, and a creamy Parmesan sauce, perfect for busy weeknights.

  • 2 cups rotisserie chicken, shredded
  • 8 ounces pasta (e.g., penne or fettuccine)
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. In the last 3 minutes of cooking, add the broccoli florets to the boiling pasta. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shredded rotisserie chicken to the skillet and stir to combine.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  5. Add the cooked pasta and broccoli to the skillet, tossing everything together. Season with salt and pepper to taste.
  6. Serve warm and enjoy!
